If the seller does not have the item in question, your best option would be to cancel the order.
We would recommend that you contact the seller, so that once they have put the item back on sale by modifying the listing, you can buy it again.
Also remember that the eBay Customer Guarantee, offers protection if you do not receive the order within the estimated delivery date, and you can open a item not received claim once the estimated delivery date has passed.
